heavenly coconut ICE-CREAM



I love when I have something beautiful to share. And now I have:)
Last night it was "girls evening".
I was with my daughters and the female cat = 5 girls.
We were recycling old cloths - making new blouse out of old one + a pair of socks.... and other rather "glimmering" things:) When you make " girls evening" you HAVE to have something really tempting. Something that gives you water in the mouth, makes your stomach feel very exciting and your face shine like the SUN.
This is just one of the "girls evening" law of live.
So I made our favorite:
coconut ice-cream
1 1/2 c cashews, soaked 2-4 hrs
the meat from 1 young coconut

3/4 c agave nectar

1/2 c coconut flakes
1 c coconut water
1 Tsp vanilla powder
1/2 c coconut oil
blend all ingredients in blender (vita-mix) until smooth. pour into some beautiful molds and into the freezer.

chocolate sauce
1/2 c coconut oil
1/2 c cocoa powder
1/4 c agave nectar
1 Tbsp lucuma
1 Tsp maca
1/2 Tsp vanilla powder
blend all together in a bowl and pour over the ICE-CREAM

CROWBERRIES


Crowberries are one of the Icelandic "fruits".
Well I know it´s a berry but in a land where you have trouble growing apples...... then those little things are like "diamonds" for us "vikings"..... They grow wild all around the country. Those small black berries are filled with and-oxidants, iron, vitamin C - just packed with nutrients. When I was young my parents always went berry picking in august. Always. And today I go with my girls. We make some yummie picnic out of it as well - food always taste better in the nature. It is so precious moments with my girls, having berry blue faces, most of the berries goes to their mouth...... and the smile is black/blue. :)
I will share some of our recipes.


raw crowberries juice
loaded with: iron + andoxidants + vitamin-c

1 cup crowberries
1/4 cup water
put everything in a blender and blend well - squeeze the mixture through a cloth mesh bag or a double layer of cheesecloth. Ready to enjoy:)




crowberry chutney
2 cups crowberries
1 cup coconut flakes
1-2 fresh chili pepper
½ - 1 red onion, cut in chunks
5 cm fresh ginger
4 cloves garlic
½-1 Tsp himalaya salt
4 lime leaves
¼ lime, peeled
1/2 cup chopped fresh cilantro, loosely packed
1/4 cup chopped fresh mint, loosely packed
combine all of the ingredients in a food processor and process until combined, the mixture should be a little chunky.

JAM and CHEESE

Yesterday was such a beautiful day. I was picking black currant with my 3 girls,
Hildur
(28) Julia (14) Athena (8 - step daughter).
After wards we went home and made some really delicious
JAM
I will give you the recipe here - so easy and healthy yummmmmmmmmy

Black currant JAM
2 pint black currant

3/4 cups agave nectar
1 Tbsp cinnamon
1 Tbsp shredded lime peel
put everything in a food processor and blend for about 30 -60 sec.
this jam keeps for 10-14 days in the fridge, and for many weeks in the freezer

And then to the CHEESE
I was soooooooo addicted to cheese when I changed my diet - OMG - I thought my live was over and out - and I would be bored until my days end.......
Today I know that the live is just beginning when you change your diet -
soooooooooooooo many good things to learn we are so blessed guys :)

I will show you my favorite cheese - so simple and just brilliant. You can use it as a "cheese" sauce on pasta, lasagna, salad or........ You can dehydrate it and then you get a beautiful "parmesan look a like" thing. So many ways to make magic with this simple recipe.

"parmesan look a like"
1 cup cashews, soaked for 2-4 hours
1 cup pine nuts, soaked for 2-4 hours
2 cups rejuvelac
(or 1 1/2 cup water + 1/2 cup lime/lemon juice)
3 Tbsp nutritional yeast
1/2 Tsp himalaya salt
put everything in a blender and blend until smooth. 2 cups of mixture on a teflax shead on a dehydrator tray and even it out with a spatula. dehydrate for 6 hrs on each side or until it is dry.

Tomato soup

The other day I found a recipe of a tomato soup in Dhrumils facebook: "4 big tomatoes, 2 cloves garlic, 2 tbs tahini, 1 ts sea salt, cumin, turmeric, cayenne&b-pepper, 1/4 an onion. Blend & serve lukewarm."
I tried the soup and it was really easy & delicious. Even my teenager daughter Julia loved it......
this lunch time Dhrumils tomato soup did inspired me to make my own tomato soup
I was not so hungry but needed a good tasting nutrition into my body :)
so this is what I made, another soup, sooo simple & easy and now my husband said ummmm.



2 big tomatos
1 clove garlic
1/2 tsp himalaya salt
1/4 tsp turmeric
1/4 tsp cumin
1 young coconut, water + meat
1-2 tsp freshly grated ginger
dash of cayenne

topping:
raw coconut flakes and
basil pesto:
makes about 1 cup
2 cups basil leaves
2 cloves garlic, crushed
½ tsp himalaya salt
¼ cup olive oil
¼ cup pine nuts
Combine all ingredients, except the pine nuts, in a food processor and pulse a few times, to begin chopping the fresh basil leaves.
Add the pine nuts and process until the desired consistency is achieved.

more blueberries recipe - Kids favorites

I just love to make food for kids :) or have them making food with me. I have this 9 years old friend who some times calls and ask if she can come over and help me in the kitchen.
She specially loves my high speed blender. She puts all kind of fruits
and nuts + water and makes the most delicious smoothies.


We went berry picking the other day and when we arrived back home she asked if we could play with the blender and the blueberries. And so we did. We made this delicious blueberries smoothie out of cashews and some freshly picked blueberries. After drinking 2 glasses she was filled :)
But there was some smoothie left and that we put in some really handy ice cream molds.

This ice cream is just brilliant as breakfast or as a small meal. My 14 years daughter and her friends just loves those after working out or..........

blueberries and cashew smoothie

1/4 cup cashews, soaked for 2-4hrs
4 cups water
1 banana, peeled
3-4 dates, pitted
1/2 tsp bourbon vanilla
1/2 tsp green wheat grass powder or any other green powder
1 pint blueberries
begin with water and cashews in the blender and blend until smooth. add the remaining ingredients and blend well. enjoy both fresh and frozen as ice cream pops :)

Welkome to Heavenly RAW

Hi my name is solla. I make yummy food and grow vegetables and greens in Iceland ;) I love RAW food. I went to Puerto Rico 1996 and have been on the RAW and LIVING track since then. I give RAW foods classes, writes recipe books, been on TV for many years and I
my live.




I write in a weekly magazin in Iceland where I give RawFood recipes. This week I am using blueberries, you can pick them wild here around Reykjavik and all over Iceland.
I went berry picking with my dear friend Angela and her boyfriend Matt on her 30th years birthdayyyyyyyyyyyyy
and we got those beautiful berries ummmmmmmmmmmmm.

Raw Blueberry candies

1 cup coconut flakes
1 cup dates
1 tsp vanilla powder
1/4 tsp himalaya salt
1/2 cup blueberries
2 Tbs tahini
Place coconut flakes + dates + vanilla + himalaya salt into food processor and process until everything is in small "powdered" pieces. Add blueberries and blend for few seconds and then add the tahini and finish blending. Take walnut-sized balls af the mixture and roll between the palms of your hands to form balls. Store in the refrigerator.
